PINOY FOOD RECIPE : PINOY SWEET-STYLE SPAGHETTI

Are you a fan of spaghetti?

I love Spaghetti! It’s my favorite dish next to fried chicken. My mom cooks spaghetti the sweet style. Filipino-style that is, sweet sauce with ground meat and tons of sliced hotdogs! When I was a kid, she (in her early 70s now) has never heard of oregano, basil, mozzarella and parmesan that make any pasta dish more aromatic and flavorful.


So when I was growing up, I would only be familiar with the kind of spaghetti she prepares, until I got to taste various pasta dishes served in restaurants and those I’ve seen in numerous international cooking shows. This Pinoy food recipe is a combination of what my mom used to cook with some tweaks I have made since cooking this spaghetti dish several years back.


Since January 4 celebrates National Spaghetti Day, allow me to share with you what brings warm childhood memories and a definite comfort food for me and any Pinoy who grew up accustomed to an easy Pinoy food recipe – Pinoy Sweet-Style Spaghetti.

Pinoy Sweet-Style Spaghetti ingredients

Pinoy Sweet-Style spices
Ingredients

1 kg. Spaghetti noodles

1 kg. Sweet-style Spaghetti sauce

½ kg. Lean ground pork

1 Cup Hotdog (sliced, about 250grams)

1 Big White Onions (minced)

1 Whole Garlic (minced)

1 Big Bell Pepper (diced)

1 Cup Parmesan Cheese

Chili Powder (optional)

Salt & Pepper (to taste)

1/2 cup water


Sweet-Style Spaghetti Sauce and Parmesan Cheese
Procedure

1)    Cook Spaghetti noodles according to package directions. (see cooking tips)

2)    In a bowl, combine sweet-style spaghetti sauce and ½ cup grated parmesan cheese.

3)    In a pan, sautĂ© onions until translucent. Add in garlic then add ground pork and season to taste. Drop 1/3 of the diced bell pepper.

4)    After a few minutes, add hotdogs, a pinch of chili powder and continue to sautĂ©.

5)    Once you see excess oil, take some out and add in the sweet-style spaghetti sauce with grated parmesan, water and 1/3 of diced bell pepper. Bring to a boil, stirring occasionally. Season with salt and pepper, according to taste and add more chili powder for that extra kick (optional).

6)    Once sauce starts to thicken, add the remaining bell pepper and simmer until you see your desired consistency.

Cooking Tips

Store-bought spaghetti
When cooking store-bought pasta, if the instruction calls for 8 to 10 minutes of boiling, I would boil pasta for 6 minutes. Turn off heat and retain pasta in the boiled water for a few more minutes. This prevents cooked pasta from being soggy. You want that al dente pasta, always!


Lean Ground Pork and Bell Pepper
My mom uses ground beef in her spaghetti. I opted for lean pork since I do not like the scent of beef. I also add bell pepper early on to meat for aromatic purposes.


Canned Tomatoes
If you cannot find a sweet-style spaghetti sauce, use canned tomatoes then add brown or muscovado sugar to sweeten the sauce. Add parmesan cheese and set aside for 30 minutes.
