Today marks the 114th celebration of the Philippine Independence. June 12, 1898 marks that historic event in world history where the Filipino people were no longer slaves of the Spaniards and the nation's independence was proclaimed in Kawit, Cavite.

Over the years, the historic luster of the province of Cavite has faded and other provinces made their marks as generations passed. But for me, Cavite will always be a charming province, full of possibilities - not only because some of my ancestors hail from this part of the archipelago, but because of one of my favorite vacation destinations - Tagaytay City.
Manila folks are very familiar with Tagaytay City. It is one of the most visited places in Luzon, when you just want to escape the chaotic concrete jungle. My constant travels in this bucolic ridge brought me to numerous dining destinations.

PAMANA is top on my list when you talk about Tagaytay dining. At the helm is Chef Happy Ongpauco (of the Barrio Fiesta clan). She is also one of the creators of The Boutique Bed and Breakfast where Hawaiian BarBQ is located (the pioneer resto is in Boracay Islands).

What makes PAMANA a stand-out for me is my love for traditional Filipino dishes, old pictures and antique furniture. PAMANA is a marriage of the old and the new. You are captivated by the olden charm once you step into this two-storey building. There is an abundance of all things from the past - old photos, antique furniture and even the menu was made to look "old." When it comes to their dishes - I felt I was tasting my grandmother's creations all over again.  

Adobo Three Ways by Pamana

Adobo Cooked Three Ways - the iconic Filipino dish is reincarnated in three mouthwatering concoctions. We know that there are about 100 ways to cook Adobo but to taste three in one order is bliss. You can opt for Chicken Adobo, Pork Adobo or Adobo with a Crunch - where the latter is made into thin strips and fried to a crisp. All these three versions are served in one three-division platter. 

PAMANA's Kare-Kare

Kare-Kare is always a favorite - served especially during special gatherings or Sundays with the whole family. PAMANA's version is Seafood Kare-Kare made with the freshest catch with thick peanut sauce. Unli-rice please!

PAMANA's Bagnet

Among the many dishes that I frequently enjoy at PAMANA, Bagnet will always have a special place in my heart (and gut). The pork skin is akin to pork crackling (chicharon), the meat is cooked to a perfect bite of heavenly crisp and the entire Bagnet is served on the rich and creamy goodness of Kare-Kare sauce. What more can you ask for? This calls for rice, rice and more rice!
