Since I first visited Restaurant Verbena along Aguinaldo Highway in Tagaytay City in 2007, this dining destination never cease to impress. Backed by the Discovery Suites Group and the Columbian-born Chef David Pardo de Ayala who is at the helm of the kitchen as corporate chef, it would not be a wonder why Restaurant Verbena is a definite palate-pleaser.

The cool temperature of rustic Tagaytay produces the freshest of greens. Herb-Marinated Mushrooms and Organic Arugula is such a refreshing starter. The full-bodied mushrooms on  a bed of arugula is drizzled with a honey vinaigrette infused with garlic and topped with parmesan shavings. The flavors prepare you to an even more delightful meal. 

Pan-Roasted Foie Gras was nothing but sinfully delicious with the addition of pancetta – an Italian pork belly that has been cured but not smoked, prunes and figs in cognac sauce. The sweet flavor of figs, the salty cured pork and the rich delicate taste of foie gras was enough to bring you to foodie haven. To lighten the mouthful of sensations, Seared Chilean Sea Bass with shiitake mushrooms, garlic confit and demi-glazed flavored Madeira-mushroom sauce. Dining at Restaurant Verbena is synonymous to all earthly pleasures.
